The Vagabond Restaurant is happy to announce that new management will operate the Vagabond Restaurant and Bar effectively July 6th, 2016. Alex Chang, the star chef who has become a reference for “foodies” in Miami, is taking time off to travel the world and find new inspiration for his cuisine.
“We wish Chef Alex continued success in his endeavors” said a spokesperson from the Vagabond Group.
Vagabond Restaurant and Bar is very excited to announce their new partners, Fabien Chalard and Julien Geliot. Fabien and Julien will continue the restaurant’s tradition of excellent food and service, albeit with a new chef and a new creative twist to the menu.
Being neighborhood focused, Vagabond Restaurant and Bar wanted a partner that would appreciate the MIMO district, history of the Vagabond Hotel, excellent staff and the “neighborhood vibe” of their property. They found the perfect fit in new partners Fabien and Julien. This talented duo both have extensive experience in the operation of restaurants and bars and, most recently, kicked off food and beverages operations at Hilton Bentley before moving on to new ventures. In 2009, Fabien and his partner created FC Formation, a hospitality training and vocational center that provides the required lessons to obtain a license to operate a hospitality institute. Fabien mastered the art of French cuisine and restaurant management by opening and managing several restaurants in France and possesses the renowned French title of Maître Restaurateur. In June 2013, he created Ten Fingers, an outdoor gourmet bistro that provides affordable food signed by his world-renowned friend Chef Christian Têtedoie. Fabien then opened Pléthore & Balthazar in 2013 and reinvented the restoration concept by offering guests a different set of menu for every hour of the day. The restaurant was nominated in France for the best concept of the year 2015.
Fabien and his partner are working closely with Chef Alex and Vagabond Restaurant and Bar’s current staff to accomplish a smooth transition and keep to a minimum the number of days the restaurant will be closed for business. Chef Alex will continue to serve the best of his cuisine until July 3rd and Chef Roberto Dubois will take over Vagabond Kitchen’s master chef duties on July 6th. The chef and management aren’t the only things changing as the Vagabond Restaurant and Bar as it will be renamed the Vagabond Kitchen and Bar. With a new name comes a new menu. Guests can soon order menu items such as Ponzu Oysters, Roast Beef Carpaccio, Surf n Turf, Cherry Duck Confit, Spinach Cavatelli and much more. A bar menu will also be offered with selections such as Tuna Poke Toast, Pork Belly Buns, Shrimp Cocktail and more.

Vagabond Restaurant is located at 7301 Biscayne Boulevard, Miami, FL 33138. Dinner hours include Tues-Thurs 6:00pm till Midnight, Friday and Saturdays 6:00pm till 1:00 am and Sundays 6:00pm till Midnight. Brunch served Saturdays and Sundays 11:00am till 4:00pm.
