Chef Patricio Sandoval Kicks Off Mexican Independence Day Cooking Demo with Whole Suckling Pig and Other Celebratory Dishes on Monday, September 12

To celebrate Mexican Independence Day, a holiday revered by Mexicans worldwide, Chef Patricio Sandoval of Mercadito (108 W. Kinzie St) will showcase his authentic recipes for the Mexican Independence Day Cooking Demonstration on Monday, September 12 from 6 to 9pm at Double A, located beneath Mercadito. Similar to the 4th of July, Mexico's Independence Day celebrations center around food. Chef Patricio will demonstrate how to make traditional celebratory dishes such as pozole soup and homemade fruit-filled tamales with the main event of a whole roasted suckling pig or lechón craved tableside for cooking demo guests. The cost is $55 per guest, exclusive of tax and gratuity. Reservations are required and may be made by calling 312.329.9555.

"For Mexican Independence Day, everyone pulls out all the stops to showcase the best food dishes and traditions from their region," says Chef Patricio Sandoval.

During the five course menu, guests will learn how to create Chef Patricio's creative spins on his favorite traditional dishes. For example, Chef Patricio switches up the norm al pastor preparation of the traditional pork dish with fresh shrimp for the Tacos de Camarón al Pastor. He also enhanced the flavor of common fruit tamales with macerated strawberries, pineapple and mango cooked with salt and sugar. Each course will be accompanied by a celebratory cocktail paired with the meal by Mercadito mixologist Paul Sauter. Paul will also provide a bit of historical 'bar education' on the libation traditions around Mexican Independence Day. After enjoying each course (always with a few extra samplings from Chef Patricio and Paul), guests leave with complete recipes to create their own Mexico Independence Day celebration.

The menu for the Mexican Independence Day Cooking Demonstration on Monday, September 12 will feature:

Sopes de Queso

Crispy corn masa, black bean hash, queso fresco, tomatillo salsa, chicharron

Pozole Rojo

Braised hominy, pulled chicken, guajillo chiles, crispy tortillas, radishes

Tacos de Camaron al Pastor

Ancho guajillo, marinated shrimp, grilled pineapple, chile de arbol salsa

 Lechon

Roasted suckling pig, rosemary, grilled apples and pears, chile ancho

Tamales de Dulce

Sweet corn masa, corn husk, macerated fruits

Mercadito will continue the Mexican Independence Day celebrations all week long with a series of 'Viva La Independencia!' specials from September 12-18 including: Huarache Mexicano, chile guajillo, corn masa, black bean hash, cabbage, crema fresca, cotija cheese, choice of carne, pollo or pastor ($16); Chile Relleno, stuffed chile ancho, ground pork, raisins, almonds, sweet plantain puree, roasted tomato salsa($22); and the Nachito cocktail of tequila hibiscus flower infusion, agave nectar and lime juice ($24);.
