Chophouse Miami, downtown Miami’s revitalized dining destination, will serve a three-course, pre-fixe dinner on Christmas Eve, priced at $55 per person, exclusive of tax and gratuity. For the first-course, diners can choose between the roasted chestnut soup with smoked Applewood bacon, candied ginger and truffled foam or the spinach goat cheese salad with goat cheese croquette, spicy pecans, craisins, raspberry emulsion and crispy shallots. Entrée selections include roasted Colorado lamp “chopblock style” – double chop lamp rack, shared roasted lamb leg, lamb sausage, green lentil ragout, mint-yogurt salad, cabernet sauce, wild mushrooms and apricot chutney; Virginia honey glazed ham – truffled mashed potato, green bean gratin, sweet potato, pineapple-whiskey compote and corn bread bacon stuffing; or cedar plank salmon with yellow corn grits, passion fruit beurre blanc, avocado salsa, asparagus fricassee and pickled onion salad. Decadent desserts include sweet potato pie with crème Chantilly, bourbon pecan pie with eggnog anglaise and ginger ice cream or spiced apple pie with rum raisin ice cream.
