Miami Beach, Fla. (Oct. 15, 2013) – Fontainebleau Miami Beach and Maurizio Zanella, owner of the Ca’ del Bosco vineyard, are pleased to present the Ca’ del Bosco Wine Dinner at Scarpetta, the iconic resort’s AAA Four Diamond Award-winning Italian restaurant. The four-course tasting dinner will take place on Thursday, October 31 from 7 – 9 p.m., and will cost $150/person (excluding tax and gratuity).The menu will feature decadent dishes with expert wine pairings that elevate the fresh ingredients and bold flavors in each course.
Guests will prime their palates with a whimsical amuse bouche of tuna tartare with Osetra caviar, paired with a Franciacorta – Cuvée Annamaria Clementi 2004; the sweet, Champagne-like wine from Italy’s premiere sparkling wine region. The first course – creamy polenta with fricassee of wild mushrooms, will be served alongside a Franciacorta – Cuvée Prestige NV; a crisp, well-balanced blend of pinot and Chardonnay. The pasta course – bucatini with Alaskan king crab, gremolata and long hot chiles – will be complimented by a Ca’ del Bosco Chardonnay 2009. Carrying soothing notes of vanilla and hazelnut, the Chardonnay is best known for its intense aroma and brilliant gold hue. For the main course, diners will choose between a Mediterranean branzino with baby vegetables and almond brown butter brodetto or a duo of pork with pork belly and roasted baby carrots. Each of these dishes will be paired with a Ca’ del Bosco Pinéro 2008; a mellow and seductive red that carries hints of blueberry, raspberry, blackberry and currant. For dessert, Chef Nina Compton will surprise guests with a chef’s selection of desserts, paired with a Vintage Collection Satén 2008. The Satén is a feminine Franciacorta varietal. Made from white grapes only, this ideal dessert wine has a silky-smooth finish.
