With the addition of Acme Bakery & Coffee to their repertoire, the dynamic threesome have gone ahead and created The Pious Pig Restaurant Group which at this point includes The Federal Food, Drink & Provisions, current and future Phuc Yea! undertakings and, now, Acme Bakery & Coffee.
Acme Bakery & Coffee will be owned and operated on a day-to-day basis by husband and wife team Alejandro and Alysia Ortiz. Alejandro Ortiz, a CIA graduate, is formally trained in pastry and will be spearheading the creative culinary direction of Acme Bakery & Coffee. Alysia Ortiz, on the other hand, will be assisting with all front of house development, service and sales while developing a proprietary gourmet line of jams, jellies and pickles that will be available at Acme for retail sale.
The husband and wife team from the Fed, Aniece Meinhold and Cesar Zapata, will be reprising their roles at Acme as they undertake the savory kitchen, beverage and marketing side of the equation.
*** UPDATE: Despite the media alert released earlier, Cindy Kruse will no longer be at the helm of Acme Bakery & Coffee’s sweet kitchen.
Acme Bakery & Coffee is an artisanal bakery and café concept catering to Miami’s Biscayne/Mid-town/Design-District residents with a selection of viennoiseries (pastries), cakes, tarts, home-made candies, and artisanal breads combined with a limited-menu served in a casual sit-down environment.
Acme Bakery & Coffee’s “farmstead Americana” essence hearkens back to an era of “home-made” and “wholesome” with an irresistible homey charm that is at once inviting and comfortable. Moreover Acme also features a “limited” retail-designated areas where it sells cooking Americana’, current kitchen gadgets, as well as its proprietary line of dry baking mixes (muffins, breads, pancakes, etc.), preserves and gourmet miscellanea.
More reminiscent of an ‘old time general store’ counter than the conventional refrigerated display, Acme Bakery & Coffee’s expansive walk-up counter will display a myriad of cake stands and baskets that tempt the take-away guest with hand-crafted and artisanal bakery items: Pecan sticky-buns, meyer-lemon tarts, brownies, bundt and loaf cakes as well as an array of scones, cookies, and other delectable goods.
A seated, limited-service area serves as the “café” portion of the space. Small square and round tables outfitted with shaker-style chairs seats about 40-60 people for breakfast and lunch and ‘early evening’ tea.
Different cash-register/ walk-up areas are reserved for ‘take-away’ and ‘eat-in’guests: patrons walk-up to the counter where chalk-board display a small selection of sandwiches, home-made soups and salads.
ACME will team-up with local Wynwood specialty coffee roaster, Panther Coffee, to roll-out the Panther
Café program with their single origin coffees and an intensive and varied coffee program.
Set to open its doors in mid-to-late September 2012.
