Suviche Restaurant in Wynwood is up next. Everyone has been enjoying the stops on the tour, and we are getting to know each other. Perhaps, one of the best aspects of this tour is getting to know people. Those who are interested in food and culture are generally interesting themselves.

We are talking as we cross the street, and we barely notice that we are playing Frogger, not that it matters because Mirka, our tour guide, is stopping traffic for us. Her ability to take care of us without us feeling the slightest worry is one of the most impressive aspects of her character. Yes, it is her job, but she is obviously good at it because of the person she is. Sometimes character trumps experience.

Ah, we have made it to Suviche. We walk up a few steps onto the patio where there are swinging couches and another long table waiting for us to take our cushiony seats. A large mural of a woman with twinkling eyes serves as the main talking point.

If you have not guessed it from the name, they serve ceviche. Ceviche is a cocktail of fish that is cooked in citrus rather than heat. In this case, the citrus is lime and the white fish is marinated in Peruvian sauce. The bowl is topped with canchita, choclo, camote, and garnished with thinly sliced red onion. A single, square-cut piece of sweet potato adds color to the dish and a sweet bite to balance the delightfully sour citrus and onion.
