Inspired by the large influence of Asian flavors in Peruvian cuisine, the Chifa ceviche refers to the fusion style of Japanese and Peruvian dishes. This ceviche starts off with salmon and is combined with peanuts, ginger, wonton strips, cilantro, pickled vegetables, and sesame marinades. The sesame marinade is what makes the dish, making for a sweet and savory combination that is very reminiscent of an asian dressing. The wonton strips provide a needed crunch that is a chance of pace from the acidic and soft textures from the fish.
