MIAMI SMOKERS URBAN SMOKEHOUSE TO OPEN RETAIL SHOP IN LITTLE HAVANA THIS FALL

Miami Smokers Soft Opening Monday, October 13; Hard Opening Scheduled for Late Fall

Chefs, Owners and self-proclaimed Smoke Whisperers, Andres Barrientos and James Bowers of Miami Smokers are gearing up for a late fall opening of their urban smokehouse and deli at 306 NW 27th Avenue, in the burgeoning neighborhood of Little Havana. Nearly a year after the launch of their heartbreaking Kickstarter campaign, Miami’s unstoppable bacon boys, who already cure and smoke Heritage Breed pork bellies for top Miami restaurants such as Michael Mina 74, Lokal, Azucar Ice Cream, Eating House, Wynwood Brewery, Kush Wynwood and Benchwarmers, have prevailed and managed to design, build and soon-open their shop through their very own blood, sweat and tears.

Slated to open soft on Monday, October 13, 2014 with limited inventory, Miami Smokers Urban Smokehouse will be offering their coveted packaged goods ($4-$6), such as Candied Bacon; Bacon Jerky; and Toasted Krispy Treats, as well as serving-up Smokers’ signature BLT sandwiches ($12) – steak cut bacon, avocado puree, and house grown lettuce and heirloom tomato on sour dough bread; and Chef Allen’s Urban Pickles. Barrientos and Bowers will also be found counter-side slicing bacon for folks to take home and cook.

Already utilizing their space to create, the boys will fill the deli case with goodies, as the product becomes available. Housemade charcuterie and cured and smoked meats, including fresh sausages (within a couple weeks), salamis (over the next two months), and larger meats such as hams (in the next six months) are just part of the line-up. Fresh cuts of top-quality Heritage pork and selections from the only dry-aged pork program in town will also be on offer.

The full-on sandwich spot will come later with the Grand Opening and plans for breakfast and lunch service, with pick up or delivery to Little Havana and Brickell area. Deli-like sammies boasting homemade and homegrown ingredients on Zak the Baker bread, as well as a prix fixe daily plate and rotating grinders, based on their cyclical sausage selection. Smokehouse Sandwiches ($12) will likely include Pork Churrasco – Chimichurri marinated pork skirt, house lettuce, and heirloom tomato on a baguette; Croque Madame – country ham, havarti and a farm egg on sourdough; the Smokers Cold Cut – assorted cuts, havarti, house lettuce and heirloom tomato, pickled onions, smoked mayo, beer mustard, and balsamic glaze on a baguette; and Havana Club –bacon, lechon, havarti, avocado puree, smoked mayo, and house lettuce and heirloom tomato on sourdough. Daily Specials ($15) will be served with coconut rice and peas, pink slaw, and a corn bread muffin and include choices such as bbq pulled pork, roasted loin or chop, bbq ribs, scrapple; chili; and smoked lechon. Weekly Grinders ($8) will be served on potato rolls with toppings such as beer mustard, pickled onions, pepper relish, mango bbq sauce and kraut. A future Curbside Breakfast will provide early risers with morning treats ($6) such as the Rebel Within – corn bread muffin, bacon , scallion and a farm egg; Biscuit Sammie – choice of meat (bacon, sausage, ham), farm egg, havarti, jailhouse biscuit and local honey; and the Bacon & Eggs – steak-cut bacon, two farm eggs your way and sour dough toast.

The 2,500 square-foot locale is largely workspace, housing 12x7-foot smokers, five walk-in coolers for curing, a dedicated aging room and tons of storage. The common area looks the urban smokehouse part with chalkboard walls donning the menu and specials, a substantial knife display behind the counter, pork-enthused murals from house designer and friend graffiti artist Krave; a full indoor garden featuring lettuce, herbs, and tomatoes; and their prized vintage piece of equipment: a fully-functioning 100-year old Berkel meat slicer.
