WHERE THERE’S A WHISK, THERE’S A WAY:
ABBALE TELAVIVIAN KITCHEN WELCOMES HEDY GOLDSMITH AS EXECUTIVE PASTRY CHEF

One of America’s most beloved and acclaimed pastry chefs, Hedy Goldsmith, has joined Chef Sam Gorenstein’s culinary team at Abbale Telavivian Kitchen as executive pastry chef. Goldsmith, a two-time James Beard Award Finalist for the Nationally contested Outstanding Pastry Chef award, is credited with revolutionizing the Miami culinary scene as part of Chef Michael Schwartz’s culinary empire. With her retro-modern desserts and perfectly balanced multi-layered sweet and savory flavor profiles, Goldsmith developed a unique signature style that launched her as a stand-alone talent.

Gorenstein and Goldsmith’s personal and professional relationship began more than 15 years ago when Gorenstein took a job as sous chef at Michael’s Genuine, where Hedy was overseeing the pastry program. “I have always been in awe of Hedy’s talent, creativity and hard work,” says Gorenstein. “We’ve stayed friends since that first experience together in Michael’s tiny kitchen and when the opportunity came up to welcome Hedy into the Abbale family, it was a no brainer.”

Abbale’s current pastry and dessert menus reads like the blackboard of an Israeli bakery with selections such as Nutella & Halvah Babka, Lemon & Rosemary Poundcake and Baklava. Goldsmith plans to build on the existing menu, while slowly introducing her own distinctive roster of sweet and savory creations.

Said Goldsmith, “Coming to Abbale feels like the right move for me at the moment; Sam and Omer [Horev], (Gorenstein’s partner) have crafted an incredibly unique, sophisticated but simple concept that has become one of Miami’s most popular dining destinations in a very short time. I am looking forward to working with all these wonderful flavors and spices, to expand and elevate the dessert menu, supplementing the current menu with my take on modern and authentic Israeli and Middle Eastern pastry.”

Expect to see Goldsmith’s influence on Abbale’s popular, Telavivian-style Sunday Brunch as well as the restaurant’s dinner menu in the coming weeks.
