French done Pubbelly-style bistro

PUBBELLY TO HOST L’ECHON BRASSERIE PREVIEW DINNER, TUESDAY, MAY 13, 2014

Pubbelly Boys Andreas Schreiner, Sergio Navarro and Jose Mendin announce that they will host a special preview dinner for the long-awaited and highly-anticipated French done Pubbelly-style bistro, L’echon Brasserie, at their flagship restaurant Pubbelly Gastropub on Tuesday, May 13, 2014.

Featuring just two seatings – 7:00 p.m. and 9:30 p.m. – fans lucky enough to book a coveted chair in the intimate, 60-seat restaurant will indulge in an exquisitely executed 8-course meal (plus welcome cocktail and dessert tasting) of Chef Mendin’s favorite delicacies from the brasserie, slated to open this summer in conjunction with the renovated Hilton Cabana Miami Beach hotel.

The $60 per person (plus tax and gratuity) menu takes the diner on a tour of Mendin’s brasserie menu, featuring his Planche du Charcuterie – Country terrine of rabbit, pork, red currants and pistachio; Chicken Liver "Faux" Torchon with crispy chicken livers, Toulouse Sausage and Petite Jesu with country style toast, mustard and housemade pickles; Coquille St. Jacques – Maine scallop, verjus blanc, black truffle, turnips, red grapes and shiso; Tarte L’echon – country ham, tomato mustarda, parmesan and dry herbs; Pulpo a la Planxa – grilled octopus , romesco verde, confit tomato, olives, arugula, pimento and almonds; Ham & Peas Tortellini – speck consommé, English peas, fava beans and purple lila onion preserved lemon; Florida Black Grouper with black olive crust, ratatouille, ramp coulis and black olive vinaigrette; Lamb Duo – roasted loin of lamb and "sweet & sour" lamb belly, artichoke barigoule, lacinato kale, roasted cherry tomato, fennel relish and rosemary lamb jus; and Asperges Blanches – poached white asparagus in brown butter vinaigrette, soy, toasted hazelnuts and preserved lemons. A decadent dessert tasting from the young and talented Pubbelly Group pastry chef Maria Orantes, is also included.

A special wine list composed by Pubbelly Group’s owner and sommelier Andreas Schreiner and cocktails from mixology maven Ashley Danella will be sold on a consumption basis.

Their seventh unique concept to open in under four years, L’echon Brasserie, the larger, 130-seat locale will be the first to include an oceanfront outdoor patio – a surprisingly unique feature in Miami. Despite the aforementioned, the brasserie will be all-Pubbelly, holding true to the staples that have put the brand on the map. A scrumptious menu of shareable plates; stellar selection of craft beers, wines and cocktails; cool, head-bopping music; friendly staff; and a hip, comfortable décor embodying the concept and it’s owners, will not be missed.

L’echon Brasserie, located within the Hilton Cabana Miami Beach hotel at 6261 Collins Avenue, will serve breakfast daily from 7 a.m. – 11 a.m.; lunch Monday-Friday from noon – 3 p.m. and dinner Sunday – Thursday from 6 p.m. – 11 p.m. and Friday and Saturday from 6 p.m. – 12 a.m. The pool and beach will be open from sunrise to sunset, with food and beverage service from 11 a.m. – 5 p.m. The pool bar will remain open until 10 p.m. on most evenings.
