Blade Is Back At Fontainebleau Miami Beach

With 12 fabulous venues for dining, cocktails and entertainment on the premises, there’s very little in the way of food and drink that can’t be conjured up at a moment’s notice at Fontainebleau Miami Beach. Perfectly cooked prime beef? Gotham Steak is happy to accommodate. Innovative modern Chinese? Hakkasan has you covered. Four star Italian? Step right up to Scarpetta. But since the closing of the resort’s hip hotspot, Blade Sushi Lounge, those with a yen for sushi have had to satisfy their cravings elsewhere. That’s not the case any longer, as Blade Sushi is back – now sharing space with the resort’s modern American brasserie, Vida. With a focus on the freshest fish for sushi and sashimi, and a novel selection of specialty appetizers and rolls, Blade’s menu will be prepared by a talented trio of trained sushi chefs. Currently in previews, the full Blade menu will be available and the restaurant will be operating on all cylinders by the end of April 2011 as Vida & Blade Sushi.

Central to the addition of Blade Sushi to the Vida space is the recent addition of the bustling, central sushi bar, manned by sushi chefs Benny Bandi, Aki and Diego Ng. All have trained with top sushi masters including Nobu Matsuhisa and Morimoto, and have honed their knife skills at some of South Florida’s top dining destinations including Nobu, Sushi Samba Dromo, Morimoto and Sushi Shoji.

According to executive chef Thomas Connell, “With a property like ours, that offers so many stellar dining and entertainment experiences, a top notch sushi restaurant is an essential element. We’re thrilled to bring Blade back and tie it to Vida, a high energy space that’s right off the Chateau main lobby and has a buzz all of its own. We look forward to offering guests a modern sushi bar with the Fontainebleau’s signature flair and originality, as either a singular dining experience or in tandem with the modern brasserie menu at Vida.”

Blade’s newly minted menu is comprised of dishes strong on traditional Asian flavors as well as modern, creative takes on classic rolls, tartares and carpaccios. Appetizer stand-outs include octopus carpaccio; a tender serving of thin sliced octopus with sweet pepper, tomato, red onion, cucumber and spicy vinegar dressing and yellowtail tartare – a delicate blend of diced yellow tail, Asian pear, avocado and yuzu miso sauce. Specialty rolls boast an imaginative blend of flavors – from the namesake Blade roll which is composed of marinated salmon, fresh mozzarella, spicy mayonnaise and fried garlic to the lobster roll – a mélange of cucumber, mayonnaise, masago, avocado, tempura flakes and eel sauce to the Vida which blends cool and spice with chopped Hamachi, asparagus, ooba leaf, wasabi tobiko and Serrano chili.

There is a succinct but well curated selection of sakes by the glass and bottle as well as a selection of Japanese beers; and of course, diners can order cocktails and wines by the glass or bottle from Vida’s comprehensive beverage menu.

Vida, a popular Fontainebleau dining destination since opening, offers contemporary American cuisine for breakfast, lunch and dinner. In its dynamic see-and be-seen environment, the restaurant is perfect for everything from a business lunch to a casual dinner, with a true brasserie menu that offers something for everyone. Simply prepared dishes boasting great ingredients are Vida’s hallmark -- with an exhibition kitchen that showcases the restaurant’s rotisserie.

Vida & Blade Sushi

Flavorful spit roasted entrees including beef churrasco with chimichurri, rosemary lemon chicken and garlic prawns are standouts on an extensive menu that also offers options ranging from a perfectly executed Caesar salad to the juicy Vida burger. Taking it up a notch, entrees include selections like braised beef short ribs with celery cream, Brussels leaves and bordelaise and crispy snapper with white beans, spinach, and roasted garlic soppresatta. Pastas, salads and pizzas round out the menu; along with indulgent dessert selections like banana crème brûlée and warm apple tart with apple cider caramel and pecan fudge ice cream.

Vida & Blade Sushi are located on the Chateau lobby level of the Fontainebleau Miami Beach at 4441 Collins Avenue. Vida is open for breakfast, lunch and dinner daily. Breakfast is served from 7:00 a.m. to 11:00 a.m. daily, with a breakfast buffet served until noon on Sundays. Lunch is served at Vida & Blade Sushi from 11:00 a.m. to 3:00 p.m. daily; dinner is offered Sundays through Thursdays from 5:00 p.m. to 10:00 p.m. and until 11:00 p.m. on Fridays and Saturdays.
