Recently appointed chef de cuisine Marlon Rambaran has introduced delectable new dishes at Fontainebleau Miami Beach’s AAA Four Diamond award-winning restaurant, Scarpetta. The menu offerings are inspired by the rustic Italian flavors and straightforward style the restaurant is known for, giving South Florida foodies and Scarpetta fans new reasons to visit the restaurant.

“Scarpetta’s name originates from the Italian expression, “little shoe,” after the shape bread takes when used to soak up every last bite of the meal and this is what I tried to keep in mind when creating these new dishes,” said Marlon. “I feel each new addition represents my culinary style but also compliments the signature specialties Scarpetta is known for.”

Marlon has added at least one new dish to each course of the menu. For “Primi Piatti”, Chef has added Stracciatella ($26), made with poached lobster, beets and hazelnut blood orange vinaigrette. New “Paste” options include Suckling Pig Tortellini ($30), with pickled squash, chestnuts and sage brown butter; Squid Ink Tagliolini ($28), with braised octopus, tomato and oregano; Ricotta and Truffle Ravioli ($34), featuring black trumpet mushrooms and a Parmesan brodo; and Scialatelli ($36) with main lobster, arugula, basil and bottarga bread crumbs.

Several new main courses grace the menu, including three new seafood dishes: Spiced Swordfish ($30) with artichoke, smoked fingerlings and arugula;Whole Grilled Orata ($35) with Florida corn, charred scallion and pickled leek vinaigrette; and an Olive Oil Poached Black Bass ($38), served with Venetian rice, fava bean and calamari soffritto. Rounding out the “Piatta” section is Marlon’s seasonally-inspired Autumn Spiced Long Island Duck ($37), with sweet squash puree, figs, Swiss chard and fegato sauce as well as Veal Sirloin ($52), with guanciale, wild mushrooms, pickled onions and caper sauce.

Marlon has also been profiling some off-menu specials including a recent Truffle Tagliatelle ($95) with English peas, wild mushrooms, preserved truffle oil and a fonduta of cheeses, finished tableside with fresh pecorino and parmesan, a truffle sabayon and shaved truffles, available now throughout the duration of truffle season. Additional seasonal specials will continue to be available in the weeks to come.
