Edge, Steak & Bar

As the crown jewel of the multi-million dollar renovation of the Four Seasons Miami Hotel, Edge, Steak & Bar will host its first Holiday celebration by serving a gourmet, three-course pre-fixe dinner menu on Christmas Eve, from 6:30 p.m. to 11:30 p.m., priced at $85 per person, exclusive of tax and gratuity. For the first-course, guests can indulge in dishes such as winter pumpkin bisque – spiny lobster with spiced Chantilly and chervil and beef tartare – prime tenderloin with traditional garnish pickled mustard seeds. Second-course menu options include crispy pork belly with candied chestnut puree, Loxahatchee mint and cipollini as well as duck confit and foraged mushroom strudel with Valencia orange braised endive and truffle essence. Third-course dishes include selections such as “turkey dinner” – stuffed breast of turkey, sweet potato brûlée, haricot verts, cranberry and chestnut puree and yellow tail snapper with preserved lemon and artichoke fricase, nicoise olives and lamb jus. Delight your sweet tooth with desserts such as the seasonal eggnog soufflé with cinnamon anglaise and vanilla ice cream as well as the trio – a cortadito shooter, chocolate truffle tart and Malbec poached pear.

Edge, Steak & Bar will serve a delicious Christmas Day Brunch in the 6th floor banquet area, from 11 a.m. to 3 p.m., priced at $85 per person and $35 for children under 12, exclusive of tax and gratuity. The buffet will have an array of food stations such as the Asian station, omelet station and carving station. Entrees including Andouille sausage, crawfish étouffé, fried catfish and Singapore rice noodles will be offered. Accompany those dishes with seasonal sides such as candied sweet yams with marshmallow and brown-buttered Brussels sprouts. The restaurant will also offer an array of cured meats and tapas, salads and cheeses. A customized kids menu will serve dishes including roasted turkey breast with mashed potatoes and gravy, chicken tenders with french fries and mac and cheese. An assortment of Chef Marko’s Holiday desserts will include Yule logs, croquembouche, apple tarte tatin and plum pudding. In the evening, a three-course, pre-fixe dinner menu will be served, in addition to their regular menu, from 6:30 p.m. to 11:30 p.m., priced at $45 per person, exclusive of tax and gratuity.
