Chef Jose Mendin To Host Cochon555 Bespoke Dinner On March 25th

An Evening Of Culinary Modernity At Pubbelly Noodle Bar Hosted By The Pubbelly Group’s Chef José Mendin With Special Guest Chefs Diego Oka And Michael Beltran

Miami, FL (March 22, 2017) — One of America’s most dynamic culinary festivals, Cochon555, brings its 2017 tour to Miami on March 25 and 26. The weekend kicks off with Chef’s Course, a one-of-a-kind, 5-course dining experience (in the name of Piggy Bank charity) at Pubbelly Noodle Bar (1418 20th St, Miami Beach, FL 33139), with Chef Jose Mendin. Hosted by Jose Mendin of The Pubbelly Group on Saturday, March 25 at 7:00PM, Chef’s Course BESPOKE: An Evening of Culinary Modernity, will feature guest chefs Diego Oka of La Mar by Gaston Acurio at Mandarin Oriental and Michael Beltran of Ariete. The evening will take as its theme “Culinary Modernity,” with each chef creating one course that embodies their own conception of the night’s core ideas. The final course will be a group collaboration, in which all four chefs will cook one family-style course representative of what they believe to be modernity.

Premium wine and cocktail pairings will accompany the five course meal following a pre-dinner cocktail reception with passed appetizers presented by House of Angostura. To close the evening, Chef Maria Orantes of Pubbelly Noodle Bar will prepare a pastry course featuring Perfect Puree of Napa Valley. Evan Benn of the Miami Herald, along with Piggy Bank founder Brady Lowe and Communications Director Robert McKeown will be in attendance as guides of sorts – our own culinary Virgils – illuminating for all in attendance the ideas which define our culinary time and inspire Cochon555 events. “Our BESPOKE dinner series was created as a way to link an intimate and luxurious food-and-wine experience to the very ideas that help define our culinary time – and future,” says Cochon555 founder Brady Lowe. “We’ve tried to evolve the experience of our main event with the addition of palate-expanding dinners like Chef’s Course that extend the rich, complex flavors that are created when cooking heritage breed pigs.”

At the center of all Cochon555 events is a culinary championship featuring five chefs cooking five whole, heritage breed pigs with innovative techniques and bold flavor profiles. One week before the event, each chef receives a knock on their door by a pig farmer and a 180-200 pound heritage breed pig. They are each tasked to create and present a “Judge’s Plate” of 6 dishes scored on categories such as utilization; cooking techniques; and overall flavor. The winner from each city is crowned the “Prince or Princess of Porc,” and given a place at our national championship, Grand Cochon, to be held in Chicago during October 2017.

Communal feasting is an integral part of the Cochon555 culinary fabric. Beyond the 30 chef-competitor dishes - all told, some 1,200-plus pounds of heritage pork from family farms - guests can sample beef tartare with the wines of Antica Napa Valley, farmhouse cheeses; a pop-up bakery from La Brea; a Salami Snack Bar from Creminelli and Divina; a ramen noodle soup bar paired with the wines of Twomey and Silver Oak among others. Innovative spirit, wine, and cocktail experiences include Smoked Old Fashioneds with Breckenridge Bourbon; The Manhattan Project presented by Poached Jobs, the Tiki Bar featuring Angostura Rum punches; a Courvoisier Cognac cocktail and neat tasting; and a Heritage Rum Cart. The array of wines grouped under our “5 Winemakers” banner features Silver Oak, Scholium Project; Pax Wine Cellars; and more.
