After its successful first exclusive dining experience, Executive Chef of Miami’s best and most well-known Mexican restaurant concept and tequila garden, Pilo’s Street Tacos and Pilo’s Tequila Garden, Erick Lopez, looks forward to hosting another The Chef’s Table Dining Experience on Thursday, October 6, 2022 at 7:00 to 9:00 p.m.
Erick Lopez, just like its first dining experience, curated a special menu of tacos that will perfectly go with each Frozaritas on tap. This menu will consist of:
● Lobster Acapulco: Half Florida Lobster, Pineapple, Chipotle Mayo, Crispy Serrano Chips & Blue Corn Tortillas.
● Tacos de Canasta: Sous-Vide Pork Carnitas, Caremalized Onion, Cilantro, Mexican Spices and Herbs Oil & Corn Tortillas.
● Braised Short Ribs: Banana Ketchup and Shallot Reduction, Sesame Seeds, Watermelon Raddish, Orange, Avocado Slaw & Blue Corn Tortillas.
● Herb Spiced Chicken: Ajipanka, Lime Reduction, Arugula, Caper Berry & Remoulade.
● Leek Wrapped Cod: Cod, Crispy Yuca Scales, Spicy Burre Blanc & Blue Corn Tortillas.
● Blacken Red Jumbo Shrimp: Roasted Poblano Tomatillo, Escabeche, Crispy Capers & Blue Corn Tortillas.
Tacos and Margaritas go hand in hand and now guests can also enjoy Pilo’s latest cocktail concept: Frozaritas. The pairing menu will feature 6 margaritas, from Classic, Frosé-Rita, to Coconut Blue, all paired perfectly by Chef Erick Lopez.
Frozaritas is both a branded cocktail and a physical pop-up, promising a refreshing, tequila-focused drinking experience created by entrepreneur and entertainment industry mogul Charles Walk and hospitality changemaker Derek Gonzalez. The namesake Frozaritas are top-shelf frozen margaritas made in a range of delicious flavor combinations using organic ingredients and only the best agave-based spirits. Tequila is also one of the best in the industry all Frozaritas are made with 818 tequila!
Pilo’s Street Tacos made it’s debut in Brickell in 2017, Pilo’s founder Derek Gonzalez, would find himself reminiscing on the tacos his late Aunt Pilo would make in Mexico during his childhood. This craving prompted him to create the most authentic street tacos in Miami. Pilo’s Street Tacos, is a quick-service restaurant concept centered around its authentic, bold flavors and inclusive environment, the menu consists of authentic street tacos, elotes & esuites, burritos, la fresa, and so much more!
In March 2022, founder Derek Gonzalez and his team launched their new concept frozaritas all while bringing the authentic Street Tacos to their Wynwood Tequila Garden. The new concept and location combines delicious food and nightlife. This location features an open-air Tequila Garden and transforms into a welcoming nightlife atmosphere with frequent special events and top-name artists, three full-service bars, a state-of-the-art DJ booth, bottle service and VIP booths, and an expansive tequila, mezcal and cocktail list for guests to enjoy day or night. Guests can also enjoy the fast-casual authentic street tacos concept that Pilo’s has to offer.
With this special menu, Chef Lopez was inspired by his childhood while growing up in Colombia and the authentic Mexican street food. Combining the two was his way of blending two cultures in one all while always keeping Mexico his main inspiration.
“ Our first chef’s table dinning experience was a huge success!” said Chef Erick. “Friends, family and even new patron came out to support me at what I love doing the most and that’s cooking. If it’s one thing that can bring everyone together, it’s their love for our authentic Mexican food, which I have that in common with them too.”
Founded by Derek Gonzalez in 2017 in Miami, Florida, Pilo’s Street Tacos offers authentic Mexican food, street tacos, late-night bites, interactive and visually stunning art pieces and an inclusive environment for the entire community to enjoy. Pilo’s, including its newest location in the heart of Wynwood, has a mission to employ individuals with intellectual and developmental disabilities—known as “special abilities” to the Pilo’s team—and help them achieve their dreams, increase their independence and provide them with meaningful companionship. The flagship Wynwood location features an open-air Tequila Garden and transforms into a welcoming nightlife atmosphere with frequent special events and top-name artists. Guests are transported to the streets of Mexico City upon arrival, and greeted with vibrant and colorful hand-painted murals from local and international artists, showcasing unity and inclusion. Currently, Pilo's has two locations in South Florida: their original location in Brickell and the flagship Tequila Garden location in Wynwood.
Raised on a farm and surrounded by farm-to-table ingredients, Lopez had the true meaning of organic. Since moving to the states when he was 5 years old, it had never changed his roots. Lopez’s career started
as a dish washer while going to culinary school in Johnson & Wales University where he was able to obtain a bachelor’s in culinary, hotel management and baking & pastry. Lopez’s job in banquets at Coral Reef Yacht Club in Coral Gables, where he was able to obtain his first sous chef position later moving on to other venues. His true resume started as he was hired by the Biltmore hotel in Coral Gables where he quickly escalated in ranks as assistant manager then head of his own department this is when he came more to FOH and stopped cooking for a while.
Lopez came to Pilo’s Street Tacos early January of 2020 before the pandemic started. When he was introduced to Derek Gonzalez, founder of Pilo’s, he was not familiar with everything behind the concept and true meaning behind the brand. Blown away by the background and passion of what Gonzalez wanted Pilo’s to mean and represent, Lopez was honor of working with its staff of special needs kids, their dedication and love for everything they do was amazing taught him a lot of what they take for granted.
