After two years of development chef Makoto Okuwa is releasing his private label sake. Makoto Junmai Daiginjo will be available for guests at Okuwa’s eponymous restaurant in Bal Harbour beginning April 11, 2016.
The bold and expressive sake features distinct floral characteristics and pairs well with a variety of food from delicate sashimi dishes to hearty options such as the robata grilled meats and fish for which Makoto is well known. Produced in a brewery that was established in 1865 in Akita Prefecture, Japan, Makoto’s private label sake is characterized as a Junmai Daiginjo based on its 50% rice polish ratio and brewed with local rice and water.
Makoto Junmai Daiginjo Private Label Sake is sold at the restaurant in a 720 mL bottle for $92, by the 9-ounce carafe for $36 or by the glass for $13.
