Celebrity Chef Michelle Bernstein To Appear On Good Morning America

What to do about those pesky lionfish in Florida waters? Chef Michelle Bernstein will help try to answer that question when she appears on a special Good Morning America report on Florida’s lionfish infestation. Slated to air on Wednesday, July 20, 2011 at 7:30 a.m. EST during the national ABC morning show, the segment will feature a cooking segment with Bernstein, who tackled the pesky fish for cameras in her kitchen.

“Fileting it was a little scary but I did my homework,” said Bernstein. “As it turns out, it’s a super flaky, delicious fish that isn’t the least bit oily.” So how did the James Beard award-winning chef prepare the lionfish? She seasoned the filet with salt and pepper and pan cooked it with a dab of butter, and topped it with a nuoc nam (Vietnamese style sauce) of mangos and chiles. “It’s a beautiful fish that feels like fluke and would be great raw or cooked simply in a pan and drizzled with a squeeze of fresh lemon juice,” she adds.
