Tomatillo Salsa from Chef Miguel Aguilar
(Serves 8 to 12)
Ingredients:
- 2½ lbs.tomatillo, cleaned and small dice
- 2½ oz. jalapeño, seeded and veins removed
- 5 lbs. red onion, small dice
- 1 bunch cilantro, finely chopped
- ½ cup olive oil
- 1 tsp. sugar
- juice of 2 limes
- salt & pepper to taste
Directions:
In a medium mixing bowl, combine all ingredients and season with salt and pepper to taste.
