As Via Emilia 9’s expert “Sfoglina” or pasta maker, Chef Wendy Cacciatori hand rolls a variety of pastas for the main Tagliatelle pastas served daily including Tagliatelle Ragu (Tagliatelle in Bolognese sause), Tagliatelle Panna Salsiccia e Funghi (Tagliatelle with mushroom, sausages and cream), Tagliatelle Alle Verdure (Tagliatelle with vegetables of the day), and Tagliatelle al Prosciutto di Parma (Tagliatelle with Parma Ham). In an effort to share the tradition of true Italian cooking, Via Emilia’s open kitchen allows guests to view the pasta making and cooking process that in turn leads to immensely satisfying meals.
