MIAMI (Dec. 9, 2016) – Slow Food Miami hosts its monthly “Snail Social” on Tuesday, December 13, 2016 from 6PM – 8PM at Semilla Eatery and Bar, a locals’ favorite located in the heart of South Beach. The restaurant’s name means “seed” in Spanish – a name reflective of its dishes which all start with basic, wholesome and mostly organic ingredients.

Slow Food Miami has granted Chef Frederic Joulin and Semilla its Snail of Approval award, a designation given to restaurants that adhere to certain standards of quality, sustainability and local support. A chef-driven concept, Semilla was created by Joulin.

Joulin models the ideal example of Slow Food Miami’s intention to develop true partnerships within our community and to have chefs engage in school garden programs. He raises money to pay for the costs of the Slow Food Garden at South Pointe Elementary with proceeds from a seasonal Slow Food dish on Semilla’s menu that always features a local product. Currently, Semilla’s Slow Food dish features local chicken from Florida Natural Farms. Joulin also regularly visits the school, offering his perspective and expertise to South Pointe Elementary students.

Attendees at Tuesday’s Snail Social can look forward to savoring a complimentary welcome cocktail – Semilla’s Organic Cucumber Garden – a refreshing blend of vodka, basil, cucumber and lime, as well as complimentary small bites and discounted tapas such as:

· Chef’s Choice (complimentary)

· Florida Stone Crab from the Keys ($4)

· Organic Cajun-Spiced Cauliflower with crumbled cashew nuts ($7)

· Grilled Organic Chicken Brochette with Thai peanut sauce ($7)

· Fried Organic Chicken Tacos ($9)

· Kobe Beef Sliders with Cheddar cheese and caramelized onions ($4)

Drink specials will include $4 draft beers and $6 wine and specialty cocktails such as:

· Spicy Mexicana: tequila blanco, creme de cassis, lime juice, jalapeños

· Royal Red Berry Vodka Raspberry: prosecco, fresh strawberry puree

· Bastille Sunrise: whiskey, passion fruit, cream sherry

Guests are invited to stay for dinner afterwards to savor more of the chef’s creations and to receive a 20% discount. Crowd favorites include gluten-free options such as Florida Gluten-Free Lobster Pasta, and responsibly raised fish and meat dishes like Branzino Filet “A La Plancha” and Organic Chicken Breast Cordon Bleu.

This event is open to the public. There will be a Snail Social hosted by different Snail of Approval chefs and restaurants throughout Miami on the second Tuesday of every month.

About Semilla Eatery and Bar

Semilla Eatery and Bar is a chef-driven concept created by Chef Frederic Joulin. Joulin hails from Paris, where he developed culinary skills at a very young age with his father, who worked in the food industry. He trained in Parisian restaurants, went to hospitality school there, and began cooking with Michelin-starred chefs like Guy Savoy, as well as working as private chef for President Jacques Chirac of France. The young chef then opened his first restaurant in Paris, Le Clos St. Honoré. Everythinghe served there was homemade, a standard that would become integral to his cooking philosophy. When Joulin moved to the U.S., he worked in private high-end catering, and as executive chef at Villa Mayfair before opening Semilla Eatery and Bar. The menu, which is seasonally driven and mostly organic, uses the freshest local ingredients possible and just enough seasoning and preparation to accentuate the foods’ natural essence.

The Slow Food Miami Snail of Approval Award is not unlike the Good Housekeeping Seal of Approval in that it helps guide South Floridians and visitors to food that is good, clean and fair by identifying and honoring those producers, purveyors and artisans who contribute to the quality, authenticity and sustainabilit y of the food we eat and the beverages we drink in Miami. Quality is fundamental – food must taste good and be good for us. Quality includes: the freshness and wholesomeness of ingredients. Authenticity means that the food is true to its source, from local growers and producers. Sustainability means that we must pay attention to the consequences of how we produce and distribute food. Nominations are based on known restaurants and chefs who actively source local produce and ingredients within our farming community. Nominations are then reviewed by the Slow Food Miami Snail of Approval Committee, who also conduct on-site visits and follow up calls to farmers.
