What is the best part though, are the incredible tapas that enhance the wine-tasting experience. The Chef, Carmen Trigueros, loves to cook with exciting local ingredients and is a great fan of micro-greens.

Warm Octopus Salad antipasto with Salsa Verde

We were amazed by this dish: an octopus salad made with potatoes, dressed with micro-greens and served with the greenest Salsa Verde we have ever seen or tasted. Salsa Verde literally means “green sauce” and is a tangy, mild salsa with tons of flavor. The octopus was soft and sweet, the potatoes a great compliment to this vibrant salad.

Crab Cake

Well, we almost died and went to crab-cake-heaven after we tasted this! It is made like a crab mousse with a garden of greens and flowers on top: Beautiful to behold with an electrifying yet soft effect on the taste buds. This was the prettiest and tastiest Crab Cake we have ever tasted. Our family is totally addicted to crab cakes and we eat them whenever we can and this one is a winner for both taste and presentation.

Sopa de Coco (Coconut Soup)

Have you ever had a coconut soup with a massive scallop in the middle topped with tender greens? This bowl of pure goodness warmed our hearts and stomachs because of the marvelous intermingling of flavors, eye-catching and distinctive colors on the plate and just the plain joy it brought to our mouths.

Chef Carmen Trigueros celebrates the Mediterranean and Latin flavors with gracious flair and has a passionate desire to learn and enhance her always- evolving cuisine.

Carmen’s recipes have been featured in Bon Appetit and Gourmet magazines. In addition to her talents in the kitchen, her civic involvement is remarkable and one can taste Carmen’s kindness in her food, literally… She lives in Miami and gets her inspiration from this city’s unique diversity of cultures.
