For the month of July, the Fontainebleau Miami Beach’s three signature restaurants are offering four prix-fixe dinner menus—one for each week in July.

“Seasonal Menu,” Gotham Steak, $54
Dishes on the seasonal menus at Alfred Portale’s Gotham Steak include Maine lobster bisque, yellow fin tuna tartare, Scottish salmon with baby artichoke barigoule, basil pesto and heirloom tomatoes, shrimp and summer corn risotto, grilled prime New York strip loin, grilled swordfish steak and miso-marinated black cod.

“Seasonal Menu,” Hakkasan, $54
Highlights from the special summer menu at this contemporary Cantonese restaurant include smoked ribs salad, a dim sum platter, sweet-and-sour pork, black pepper rib-eye beef, seafood claypot in sha cha sauce, braised tofu aubergine claypot in black bean sauce and stir-fry lotus root, asparagus and lily bulb in black pepper. Desserts include coconut tapioca with mango and passion emulsion, and coconut streusel and white chocolate sorbet.

“Seasonal Menu,” Scarpetta, $54
The special summer menu at Scarpetta features some signature dishes by chef Scott Conant, such as creamy polenta with fricassee of truffled mushrooms and spaghetti with tomato and basil. The decadent dessert menu includes Amedei chocolate cake and mocha swirl cheesecake.
