Cochon555’s Heritage Fuego presented by Goya Foods, was the first Miami edition of America’s beloved, live-fire, open-air culinary experience. A record-breaking success, the event took place recently at the historic Biltmore Hotel on Sunday, November 21 and was the largest Cochon555 Miami event to date. It featured an all-star lineup of local chefs and artisans, each grilling globally-inspired heritage-breed proteins al fresco with offerings that included dry-aged beef, whole pigs, lamb, goat, squab, rabbit, duck, fish, chicken, oysters and heirloom vegetables. Produced and owned by Agency 21, the event’s ultimate goal was to provide education to consumers while creating an experience that guests could sink their teeth into with honest food from real farmers. A percentage of the proceeds from the sold out event were donated to Overtown Youth Center, a childhood development program providing comprehensive services to at-risk youth and their families, all of whom live in some of the most underserved neighborhoods in South Florida.
More than 20 of South Florida’s top chefs were on-site dishing up all types of delicious food over live fire. Participating chefs/restaurants included Aaron Brooks (Edge Steak & Bar); Cesar Zapata (Phuc Yea); James Pastor (The Rusty Pelican); Scott Linquist (Como Como); Paula DaSilva (Burlock Coast Seafare & Spirits); Danny Bouza (The Barrel BBQ); Giorgio Rapicavoli (Luca Osteria); Jean Delgado (Toro Toro); Jorgie Ramos (Cebada Rooftop); German Vollbracht (Meat N’ Bone); Vladimir Blanes (of the Biltmore Hotel); Mel Rodriguez (La Traila BBQ); Jordan Kirk (Harry’s Miami Beach); Fernando Desa (Goya Foods); Brian Nasajon (Beaker & Gray); Jonathan Bromet (Llanera Meats); Rafael Barrera (Cooking with My Doctor); Ricardo Jarquin (St. Regis Bal Harbour Resort); and Christian Chirino (TUR Kitchen). Sweets were provided by none other than Andrew Gonzalez of Night Owl Cookies.

In addition to one-of-a-kind live-fire culinary creations, Heritage Fuego featured an array of fine spirits, craft cocktails and a selection of sweet endings. “What a wild success! We were so thrilled with the amount of people who came to support this sold-out event. The energy was intoxicating. It was yet another amazing opportunity for our community to get out, dance, laugh, consume and enjoy themselves” says Brett Friedman, Partner & CEO of Agency 21, which owns and operates Heritage Fire, Cochon555, among others.
