Miami Beach, Fla. (Oct. 31, 2013) – Beginning on Nov. 1, 2013, Scarpetta, the AAA Four Diamond Award-winning Italian restaurant at Fontainebleau Miami Beach, will celebrate truffle season with a special six course prix fixe tasting menu. For $225 per person, guests will enjoy a menu accented by one of the world’s most aromatic and sought after delicacies.
The six course meal will begin with a chef’s selection amuse bouche, followed by a first course of cold smoked lobster tartare. Next, guests will feast on a hearty polenta truffled mushroom fricassee, followed by a pasta course of tagliolini and agnolotti del plin. Composed main dishes include pan-roasted scallops with broccoli, chanterelle mushrooms and lobster jus, and a 21-day aged sirloin of beef with natural jus, truffle emulsion and roasted mushrooms. Ending the evening on a sweet note is the olive oil custard with shaved truffles, compressed pears, toasted walnuts and thyme ice cream. The Scarpetta truffle-tasting menu will be offered during seasonal availability.
White truffles (tartufi bianchi) are among the most expensive foods in the world, typically priced at upwards of $1,000 per pound. The town of Alba in Italy’s northern Piedmonte region is most famous for the gastronomic gems, along with Tuscany, Umbria and Le Marche. These towns host various special events during truffle season. Locals and tourists gather for street parades and performances, markets offer discounted truffle products and restaurants feature special truffle-based menus during the months of October and November.
The special dinner will be available nightly throughout truffle season. Guests may also order from the tasting menu a-la-carte.
