FINE DINING AND FESTIVITIES ON NEW YEAR’S EVE 2011

Edge, Steak & Bar is ringing-in the New Year in ultimate style, at its prime location inside the Four Seasons Miami Hotel. On New Year’s Eve, the restaurant will serve a gourmet five-course, pre-fixe dinner, priced at $150 per person during the first seating, beginning at 6:30 p.m., and $180 per person during the second seating, beginning at 9:30 p.m. Guests will receive a complimentary glass of champagne. First-course dining selections include laughing bird shrimp ceviche with silver queen corn, garnet yams, aji Amarillo and crisp plantain or oysters on the half shell with jalapeno mignonette and house-made hot sauce. For the second-course, diners can choose between seared Hudson valley foie gras with carambola marmalade and griddle brioche pastelito, cast iron seared sea scallop with local spiny lobster, black truffle ravioli and sea urchin frappe or bouquet of Swank Farms baby field greens with hot house tomatoes, goat cheese mousse and cucumber and olive vinaigrette. Enjoy the she crab bisque with golden American caviar for the third-course. Diners can choose from an array of selections for the main-course, including pan roasted local pompano with spaghetti squash and habanero spiced coconut consommé, la quercia bacon wrapped ahi tuna with piquillo pepper, saffron arancini and sweet peas, 5-hour braised boneless lamb shank with cauliflower puree and preserved lemon gremolata or steak Diane, a petit filet mignon with asparagus and parmesan potato pave. For dessert, diners can choose from the restaurant’s chocolate selections including caramelia molten lava cake, chocolate sorbet with vanilla pearls and cookies and cream or fruit selections such as a berry smore and citrus chiboust.

After the midnight toast, join the late-night party poolside at Bahia bar and lounge, the stunning outdoor space at the Four Seasons, at an entrance fee of $50 per person. Guests can enjoy the beautiful South Florida winter air while sipping on champagne from the bubble bar and dancing the night away. Hotel guests, tower residents and Edge, Steak & Bar diners will have complimentary admission to the event. The bar will serve late-night munchies including tacos, Kobe beef short rib, grilled mahi mahi and mojo chicken.

On New Year’s Day, Edge, Steak & Bar will serve their regular a-la-carte breakfast menu, from 6:30 a.m. to 11:00 a.m. The restaurant will also offer an a-la-carte brunch, featuring breakfast specialties and lunch favorites, from 11:00 a.m. to 3 p.m. Edge, Steak & Bar is located at 1435 Brickell Avenue in the Four Seasons Miami Hotel.
