Chef Wyman Returns to South Florida to Helm Mantuano’s Miami Beach Outpost
MIAMI, FL (May 2014) – Chef Tony Mantuano welcomes new Executive Chef Chris Wyman to the Lorenzo culinary team. Chef Wyman brings 15 years of experience from restaurant capitals in New York and France to Lorenzo’s South Beach outpost, with most recent experience at NYC’s popular Italian destination, Scarpetta. This is not Wyman’s first time in Miami. Previously, he served as Sous Chef at Chef Allen’s in Miami, before moving to New York to work with Oceana.

To Lorenzo, Wyman brings a refined cooking style learned at fine dining institutions along with a stint in Brest, France solidifying those classical methods. Lorenzo’s Miami venue will continue to serve traditional Italian fare met by flavors of the American market. Signature dishes include Nonna’s Meatballs, spicy tomato, pecorino Romano; Ravioletto Crescenza, cheese-filled pasta, brown butter, rosemary, Parmigiano-Reggiano; Grilled Line Caught Local Fish, fennel, grilled artichoke, blood orange, lime gremolata all followed up by a smorgasbord of sweets featuring Cannoli, Tiramisu and Biscotti.
Lorenzo, the latest offering from cookbook author and James Beard Award-winning Chef Tony Mantuano, is a casual elegant Italian restaurant offering Chef’s signature authentic Italian cuisine. The restaurant offers hand-made pastas, pizzettas from the Italian-imported wood-burning oven, entrees off the grill, house-made gelato, Italian caffè and more. Lorenzo pairs its traditional offerings with Italian wines, champagne and sparkling wines and has also tapped celebrity mixologist Michael Jack Pazdon from Napa Valley’s Goose & Gander to drive the cocktail program. Lorenzo is Chef Mantuano’s first restaurant in Miami, adding to his four restaurants in Chicago: the four-star Spiaggia, which is nominated for “Outstanding Restaurant” in the 2013 James Beard Foundation Awards; Cafe Spiaggia, the casual sibling to Spiaggia; Bar Toma, a neighborhood regional Italian kitchen; and Terzo Piano, a modern take on Mediterranean cuisine at the Modern Wing of the Art Institute of Chicago.
