Matthew Leonard has been appointed executive chef of the Viceroy Miami. In this role he will oversee culinary operations at Eos, the hotel’s signature restaurant, as well as the property’s catering and banquet operations.

For Eos, Leonard (53) will introduce a new menu featuring his interpretation of the restaurant’s trademark light and healthy Mediterranean, Spanish, and Italian influenced cuisine in the breathtaking 15th floor setting. New items will begin appearing on the menu gradually over the coming months.

Leonard boasts more than 16 years of culinary experience in the service of four and five star rated resort properties. His career began in 1990 after completing his education at the Chicago Culinary Arts School at Kendall College. He held posts at the Ritz-Carlton Chicago as well as at the El San Juan Hotel & Casino in Puerto Rico and Mark Miller’s Coyote Café in Santa Fe. In 1996, he joined the opening team as Chef de Cuisine at The Royal Palms Hotel and Casitas, in Phoenix, Arizona; he subsequently garnered experience at The Arizona Biltmore before becoming executive banquet chef at The Phoenician Hotel, in Scottsdale, Arizona. Leonard joined the team at the prestigious Montage Resort and Spa, in the beautiful Laguna Beach, California in 2003, as executive chef. There, Leonard oversaw culinary operations with an emphasis on special events including luxury weddings, corporate and social affairs. He continued to enjoy an illustrious eight year career with the Montage Hotels and Resorts Group, opening the Montage Deer Valley in 2010 before taking the position with Viceroy Miami in July 2011.

“I am thrilled to be in Miami,” says Leonard. “My style of cuisine is fresh, simple, yet contemporary and perfectly matched to Eos’ ethic. Miami’s evolution into a burgeoning culinary destination is very exciting and I look forward to creating delicious food in such beautiful surroundings.“
