Through July 31, Michael Mina’s Bourbon Steak is offering a chef’s market menu that consists of three appetizer, entrée and dessert choices, which change daily. The dishes are based on what fish and meats are freshest, what fruit is in season, and even what spices and herbs were picked from the recently expanded chef’s garden that morning. (We hear that the resort’s Executive Chef Daniel Buss recently started making his own jams and preservers from the garden’s fruits and herbs.) A sample meal might consist of glazed short ribs, grilled lamb loin, and chocolate panna cotta.
