BLT Steak, the modern American steakhouse at the beautifully renovated Betsy Hotel, will be open on Christmas Eve and serve their usual a-la-carte dinner menu along with blackboard specials. Appetizer selections include celeriac soup with roasted apple and chestnuts ($12) and jumbo lump crabmeat with asparagus, sauce choron and grilled country bread ($18). Entrées: filet mignon and foie gras Rossini with Madeira sauce ($65) or supplement with black truffles ($20) or roasted leg of lamb with olive tapenade, rosemary and confit lemon jus ($38). Pair those entrées with sides including rainbow chard with parsnip and bacon lardons ($11) and wild mushroom tart with roasted tomato, gruyere and frisee ($11). For dessert, profiteroles with gingersnap ice cream and spiced caramel ($10) and buche de Noel with chocolate mousse and hazelnut ice cream ($10).
