PRIMROSE: Local Ingredients. Global Techniques


South Beach is a global melting pot of cultures from around the world. To stay true to that essence, The Stiles Hotel unveils a new restaurant, Primrose, characterized by a fusion of Far East Fare, traditional American gastronomies and French cooking techniques. Helmed by Regional Executive Chef Evan Percoco, the restaurant provides patrons with an intimate South Beach dining experience with a rich Art Deco history and blend of international flavors.

The timeless property radiates a neighborhood-feel blended with a chic reinvention to help patrons rediscover the beauty and authenticity of Collins Avenue. With just under 60 seats, Primrose offers an intimate culinary experience in the main dining room, and seats on the al fresco patio to relish in Miami’s eclectic nightlife.

The restaurant also pays homage to the property's original 1930s name, Primrose. Originally known as the Primrose Hotel, and later revived as The Hotel Nash, the new Stiles Hotel has been named to honor the late John Stiles Collins, the renowned land developer credited for the first use of the term "Miami Beach."

Primrose entices guests with menu creations that combine local ingredients with global techniques. Culinary selections draw attention from local farms to fishermen, using homegrown ingredients prepared with a sense of adventure and originality. Parisian cooking techniques blend with a delicate use of spices to create culinary indulgences for breakfast, lunch and dinner.

Rise and shine with a classic Continental Breakfast ($5); Chef’s freshly cut fruits ($9); Steel Cut Oatmeal ($7), decorated with raw almonds, dried cranberries, cherries and brown sugar or berries, bananas and farm honey; and other breakfast staples including pancakes and parfaits. Hearty breakfast plates, served with Collins Avenue Potatoes or fresh fruits, include the Egg White Frittata($14), with Farro, Kabocha squash, kale, goat cheese and toast; the Classic Benedict ($15), a poached egg topped with French ham and hollandaise; or the Three Egg Omelet ($13), sprinkled with savory mushrooms, brie, spinach and toast. A la carte morning favorites are also available starting at $3.

Take a breath of fresh air by the sparkling pool with a selection of midday indulgences. Start with a choice of Moroccan Olives ($7), accompanied with Feta cheese, pistachio and sourdough bread; French Onion Hummus ($7), crafted with white wine and thyme, and served with a crisp croustade; or Colossal Gulf Shrimp ($21), butterflied to perfection and cooked with knob onion, cucumber and cinnamon basil romesco. Artfully decorated salads include Crispy Eggs & Primrose Bacon ($16), frisee greens mixed with pickled shallots, potatoes, Roquefort in a lentil sherry emulsion; the Thai Chicken Salad ($16), made with toasted rice, onion, chili, gem lettuce and cilantro sweet lime; or a Gem Caesar ($14), topped with kale, aged parmesan, garlic-caper dressing and croutons, with the option of pairing grilled chicken or colossal gulf shrimp at an additional charge.

Finish off with a selection of sandwiches including Grilled Snapper ($15), served with green papaya slaw and preserved lemon remoulade on a brioche bun; Grilled Indonesian Chicken ($14), paired with cucumber, onions, carrots, Fresno chili and cilantro-aioli served on a baguette; or the Kobe Beef Burger ($14), crisp Primrose bacon, a sunny side egg and red onion balsamic jam served on a brioche bun with a side of frites.

In the evening, indulge in a sophisticated and intimate dinner with the option of dining al fresco on Collins Avenue, a moonlit view by the pool or a seat in the rustic dining room. Starters and “petit plates” include Charcuterie ($16), a variety of thinly sliced meats, country jams and Dijon, pickles and side of croustade; Crispy Confit Chicken Wings ($12), served with a green papaya slaw, raw almonds and Thai chili jam; and variations of daytime menu delights served for small or large group enjoyment.

Enjoy dinner entrée selections including the Red Snapper ($26), served atop green beans, knob onions, carrots, yellow curry broth and a side of crisp coconut rice; Sugar Cane Pork Butt ($22) a savory shoulder-cut paired with Nasi Goreng fried rice, crispy shallots and star anise consommé; Five Spiced Duck Breast($30), cooked to perfection with mushrooms, pea sprouts and plum wine glaze on an oat-scallion pancake; Steak and Frites ($28), a brined hangar steak cooked with red wine butter and served with Kennebec potatoes; Tea Brined Chicken Breast & Confit ($26), decorated with Kabocha squash, swiss chard, roasted shallots and fingerling potatoes; and more.

Grab a seat at the cozy downstairs bar with bites including Marcona Almonds($7), French Onion Hummus ($7), Olives Melangé ($7), North Eastern Cold Water Oysters (starting at $18), Colossal Gulf Shrimp ($21), Charcuterie and Fromage ($28) or a Kobe Beef Burger ($16).

Primrose serves imported and domestic beer favorites, a curated wine menu and creative hand-crafted cocktails such as the Bourbon Lemonade ($13), Florida Citrus Elizir ($12), 1120 Collins Martini ($12), Stiles Bellini ($12), Port of Miami Punch ($13) and a Barrier Island Spiced Mojito ($13).
