Nicaragua Iconic Dish – Beef Tongue

Gallo pinto (rice and beans), grilled steak, and fried cheese is the typical dish, but we encourage you to try the braised beef tongue in house sauce. The creole sauce is tomato based and contains spices such as oregano and cumin to make for a thick and hearty base in which to savor the somewhat unfamiliar cut of meat. The tongue may be chewy and fatty, but the texture is pleasant and makes for one of the most tender bites on the animal. This is a local favorite.Nicaraguan cuisine is a combination of indigenous foods and Spanish dishes. Because of this, items like creole spices, pork, beans, and corn make common appearances throughout meals.
