Fontainebleau’s award-winning modern Chinese restaurant, Hakkasan, will also offer an early and late option for New Year’s Eve diners. A four-course prix-fixe First seating is from 6PM – 7:30PM and is priced at $175 per person, excluding tax and gratuity. The family-style feast will begin with a classic Dim Sum Platter with Steamed Golden Jade Har Gau, Scallops Shui Mai with crab roe, Black Truffle Duck with pumpkin dumpling and Shrimp with Chinese chives dumpling; the appetizer is a Traditional Peking Duck; entrees include Charcoal Grill Chilean Sea Bass with wildflower honey, Wok-fried Wagyu Beef with black pepper sauce and Chicken Fried Rice with foie gras in lotus leaf. Dessert choices include Chocolate Mousse ‘Penzai’ and Sweetcorn Soft Meringue. The second seating is from 7:30PM – 10:30PM with a five-course prix-fixe menu priced at $250 per person, excluding tax and gratuity. The feast at Hakkasan begins with individual servings of Steamed Golden Jade Har Gau, Shanghai Abalone Xiao Long Bun with crab roe and a Black Truffle Green Salad with pomegranate and lily bulb; family-style appetizer of Traditional Peking Duck. Entrees served family-style include Stir-fry Bahamas Lobster Tail with edamame in XO sauce, Charcoal Grill Chilean Sea Bass with wildflower honey, Wok-fried Wagyu Beef with black pepper sauce and Chicken Fried Rice with foie gras in lotus leaf. Dessert choices include Chocolate Mousse ‘Penzai’ and Sweetcorn Soft Meringue.
