On Tuesday October 21st, db Bistro Moderne and Daniel Boulud welcomed guests for an evening with their local purveyors. Chef Daniel Boulud and Chef Jason Pringle prepared a special menu showcasing four local purveyors with wine pairings by Dinex Global Wine Director, Daniel Johnnes.

The evening began with a cocktail reception in the upstairs private dining area where guests gathered and were later joined by Daniel himself. He welcomed his guests, described the menu for the evening and gave special thanks to all the purveyors who made contributions to the new dishes.

Swank Farm started off the dinner with a tasty and fresh Baby Beets Salad topped with quinoa tabouli, sheep's milk yogurt, and red sorrel that was complimented by a glass of Domaine Mardon, Quincy 2013. The second-course came from a local Keys purveyor, Trigger, and they presented a delicious Daybook Snapper Grenobloise with spinach rubric, mushroom fricassee, and cauliflower with a glass of Guillaume Clusel, Cortex de Lyonnais, Galet 2012. AAA Pig Farms is a short ride away from Miami, located in Clewiston, FL, and provided the main dish of the night - "AAA" Farm Raised Suckling Pig, pal choi, daikon radish, baby turnip, and cartelized pear that was perfectly paired with a full bodied Domaine Aleofane, Crozes-Hermitage 2012. To top off this exceptional dinner, guests enjoyed Chef Patissier Jerome Maure’s "Paradise Farm" Pineapple Vacherin with local produce from Paradise Farm in Homestead, FL. This dish was excellently complimented by a sweet Chateau La Rame, Sainte-Croix-DuMont "Tradition" 2010. Daniel signed books for guests and took pictures with fans to leave them with a little something to remember this wonderful night.
