The award-winning Latin American concept (with locations in London and Dubai), has already become a popular choice for locals and visitors, who are seeking an innovative cocktail experience in a stimulating and exclusive environment. In honoring the roots of its Peruvian culture, the Pisco Bar at COYA prides itself on dedicating naturally infused in-house Piscos, with flavorful spices, fruits and herbs. Additionally, an extensive selection of international wines from Latin America, North America, Europe and the rest of the world along with spirits and classic cocktails, which are favored by patrons of COYA.
The moment guests step into the grand reception area, they will experience the true COYA lifestyle. They will be delighted with a rustic yet colorful bar atmosphere adored with trinkets and traditional Pisco “botija” jars placed on high shelves, visible to all. Local artists’ original artwork is also showcased throughout the space and frequently on rotation.
The Pisco Bar offers a variety of custom designed seating areas, including the bar, its lounge, or the Terrace, which is decorated with one-of-a-kind finds from Peru as well as lush oversized plants that create a secluded oasis away from its bustling Brickell sidewalk.
COYA is conveniently located in the heart of Brickell’s financial district, ideal location for business executives and locals to walk over for a mid-day cocktail and some small bites with colleagues and friends. As the sun sets, guests are welcome to stay at COYA to continue their evening and enjoy Spin Break, which features live DJs in the Pisco Bar from 8 p.m. to midnight (Thursdays) and from 9 p.m. to 1 a.m. (Fridays and Saturdays). The DJs’ vibes will complement the array of cocktails and bar bite menu items offered in the Pisco Bar.

Seasoned mixologist and Pisco connoisseur, Maria Pottage oversees the Pisco Bar program at COYA. Born in Peru, Pottage’s love for her native ingredients reflect throughout the entire cocktail program which she has carefully curated. With over 10 years in the hospitality industry, Pottage has garnered incredible experience working at some of the world’s most coveted eateries, including: Mar Cebicheria, Buddakan, Momofuku's and Ma Peche.
“It’s such an honor to be a part of the COYA family, as the restaurant has such strong ties to my Peruvian roots,” says Pottage. “In addition to crafting classic cocktails and offering guests a wide variety of specialty spirits and wine options, I love creating innovative and authentic Pisco beverages to help bring the Peruvian COYA concept to life.”
The selectively crafted cocktails from the ornate Pisco Bar, paired with food options from the separate bar bites menu, allows guests to take an enjoyable break from their day and be introduced to the innovative Latin America flavors and spirits. Known for its traditional Pisco Sour (Barsol Quebranta pisco, key lime, sugar, egg white, and chuncho bitters) and Chili Margarita (jalapeño and serrano chilies infused Herradura Blanco tequila, avocado puree, lime, and agave nectar), the Pisco Bar offers a variety of cocktails that are created for every palate ranging from sweet, to dry, hot and spicy flavors.
For those looking to skip the alcohol and feel clean, you can order a refreshing nonalcoholic “Picante” composed of natural ingredients, including avocado, lime, apple, agave and a splash of tabasco to entice your pallet.
