Rising Star Chef Alejandro Piñero Creates Fresh, New Seasonal Dishes & Retro Cocktails

Sustain Restaurant + Bar, Midtown Miami’s stylish eco-conscious eatery, has added exciting new, seasonally-inspired dishes, created by rising star chef Alejandro Piñero and artful cocktails, from seasoned sommelier and libations expert Daniel Toral.

Chef Piñero, who has received glowing reviews in The Miami Herald and NYTimes.com, describes his cuisine as “progressive American” says, “I really enjoy creating balanced dishes that incorporate local Florida grown ingredients.” Now, in time for Spring, Piñero has added lovely new menu offerings ($6-$12), ranging from swordfish croquettes with a red pepper aioli; a very-Floridian snapper tartare, prepared with cucumber and a light tomato confit; a refreshing gazpacho made with heirloom tomato, cucumber, onion; a crisp and cool watercress salad, comprised of watermelon, candied peanuts, Blue Sunshine blue cheese, and a Champagne vinaigrette; and hearty BBQ beans - a perfect side to any main dish.

To complement the new menu items, Toral has introduced new drink creations, made with house-made "cocktail condiments" like black pepper tincture, rosemary tincture, and fruit bitters used in delicate proportions. Sustain’s retro cocktails ($10-$18), such as Eden, made with Tanqueray gin, solerno, cocchi Americano, lemon, crème de violette, and amaranth blossom, and the Serpentine Cocktail, made with Pisco 100, Bulleit bourbon, Florida peaches, and peach bitters, are sure to become favorites.

Carl J. Myers, who designed the interiors of Michael’s Genuine Food & Drink and Marcie de La Rosa of De La Rosa Studio, Inc., have created a modern, tropical-style look for Sustain, which incorporates the craftsmanship of local artisans committed to sustainability. Design elements have been constructed from recycled and reclaimed materials, and the restaurant utilizes LED lighting that creates a warm glow in the interior dining room and bar.

In the dining room, an eye-catching “rib-cage” mangrove installation runs the length of one wall, and two inverted mangrove trees, from a sustainable farm in Guatemala, extend from floor to ceiling. An open kitchen contains a fragrant wood burning oven and appliances that meet Energy Star standards. The 3,200 sq. foot space encompasses indoor and outdoor seating for approximately 100 guests and an additional 20 at the bar.

Owned by Brian Goldberg and managing partner Jonathan Lazar, Sustain Restaurant + Bar, located at 3252 NE 1st Avenue in Midtown Miami is open for lunch Monday through Friday, from 11:30 a.m. to 3 p.m.; dinner is served nightly.
