Scarpetta by Scott Conant will offer a sommelier-led chocolate and champagne tasting every Thursday from 6 p.m. – 6:30 p.m. priced at $30 per person, excluding tax and gratuity. Chez Bon Bon, Fontainebleau’s coffee and patisserie shop will offer a bevy of romantic sweet treats such as a Dark Chocolate-Strawberry Cake ($37.95) made with strawberry mousse, strawberry preserves and dark chocolate buttercream, “My Heart” petit gateaux ($5.95) fresh raspberries, madeleine sponge and vanilla Bavarian cream and an assortment of other sweet confections such as cake pops, cupcakes and pralines.

Every Saturday in the month starting at 7 p.m. and on Valentine’s day, Tuesday, February 14, StripSteak by Michael Mina will offer a romantic candle-lit, flower adorned private cabana dinner for two under the stars for $500 per couple, excluding tax and gratuity, with an optional sommelier chosen wine pairing. The menu includes an amuse bouche of Kabocha Pumpkin Soup with chestnuts, pepitas and onion foam; followed by a Shellfish Platter with oysters, shrimp and King crab; Baby Beet Salad, Chateaubriand and Milk Chocolate Mousse Bar for dessert.

Celebrate with your special someone at Fontainebleau’s modern American steakhouse from celebrity chef Michael Mina with a delectable four-course prix-fixe menu priced at $200 per couple, excluding tax and gratuity, with an optional sommelier chosen wine pairing. First course is an Oyster and Shrimp Cocktail with champagne mignonette; followed by Baby Beet Salad with blue cheese, apples, candied hazelnut and Acacia honey. Then, indulge with a Chateaubriand (for two) with truffle mac and cheese, crispy Brussels sprouts and béarnaise sauce. End on a sweet note with a decadent Milk Chocolate Mousse Bar with caramelized banana ice cream.

For $150 per couple, excluding tax and gratuity, with an optional sommelier chosen wine pairing, guests will begin the evening with an amuse bouche of Rose Beets and Goat Cheese; followed by Conant’s signature Spaghetti with tomato and basil. Entrée is Roasted Beef Tenderloin Oscar with asparagus and chasseur sauce. For dessert, diners will enjoy Lemon-Thyme Ricotta Fritters with milk chocolate cremeux and mango champagne.
