World renowned celebrity chef and Top Chef Alum Carla Pellegrino has been given the honor of hosting her sixth dinner at the prestigious James Beard House in New York City on June 11 at 7 p.m. where guests will enjoy a night of artfully crafted Italian food and pairings. To mark the occasion, Chef Carla will be hosting a James Beard Preview at her newly launched restaurant Touché Rooftop Lounge & Restaurant on Tuesday, June 2 at 7:30 p.m.
For the preview, Chef Pellegrino will begin dinner with Cevice Di Branzino, jalapeno, coconut milk, cilantro, lime, red king chili, extra virgin olive oil and citrus; Barquette Russe, pate brisee topped with vegetables macedoine; and Carne Cruda All’albese, marinated raw filet mignon on crostini. Dinner will continue with La Zuppa Insalata, a tomato gazpacho base topped with romaine, iceberg, watercress and heirloom carrots; Capesante Al Campari, pan seared sea scallops in a blood orange and Campari reduction with blood orange caviar; Strigoloni Alle Triglie & Fiori Di Zucca, fresh, long strigoli pasta in a light Red Mullet, baby zucchini and zucchini blossom sauce; Merluzo Con Puree Di Patate E Cima Di Rappe, pan seared codfish over broccoli rabe and mashed potatoes; and Fegato Grasso Alle Mele, pan seared foie gras over apple compote, apple demi-glaze and apple sorbet. The dessert will be Sfogliatina Di Caramello, orange curd Chantilly, fresh raspberries and frizzy lime. The stellar five-course meal will be available for $85.00. Each dish can be paired with wines carefully selected by Carla and her team for an additional $25.00.
