Brazil Iconic Dish – Rodizio

The Brazilians have developed a dining experience known as rodizio, an all-you-can-eat type of service where gauchos walk around the dining room with skewers offering different cuts of meat at a fixed price. Just like Argentina, the diets of Brazilians are heavily based around meat. Although you can find typical cuts at rodizios, such as filet mignon, short ribs, lamb, and chorizo, Brazil is mostly known for a specialized cut called Picanha, or rump cap that still has the fat attached. The fatty layer helps baste the meat while cooking, making for succulent beef that is rich and almost buttery thanks to the natural grease from the cow.
