Beaker & Gray Introduces Brunch & Seasonal Menu Switch-Up

Nestled in the heart of Wynwood, Beaker & Gray quickly became one of Miami’s must-try dining destinations since opening in late 2015. Now, Chef/Owner Brian Nasajon is introducing a long-awaited weekend brunch, and is spicing up the menu with a variety of brand new seasonal dishes.

Effective immediately, Wynwood-goers can pop into Beaker & Gray for Nasajon’s take on America’s favorite weekend repast – brunch. The new menu, which is served Saturday from 11AM to 4PM and all day Sunday from 11AM to 11PM, includes Colds, Savory, Shared and Sweet dishes. Colds include Nova Lox ($14) – horseradish, ikura and sour dough; and Bread N’ Spreads ($13) – chicken liver pâté, roasted garlic cream and fruit compote. Savory selections feature worldly takes on iconic brunch dishes such as Waffle Panini ($15) – pork belly rillette, Gruyere and maple mustard; Omelet Dumplings ($13) – chorizo, cilantro, rocoto; Croque Madame ($17) – oxtail, Gruyere and sourdough; and Shrimp N’ Polenta ($16) – blue corn, bacon and pineapple. In keeping with Beaker & Gray’s service style, guests can enjoy Shared dishes inspired by Spanish and Latin cuisine, such as Chilaquiles ($18) – pollo asado, yucca and chipotle; Spanish Tortilla ($16) – chorizo, spuds and olives; and Parillada ($28) – skirt steak, chorizo, Nueske’s bacon and organic chicken thigh.

Last but not least, Beaker & Gray’s Pastry Chef John Maieli has baked up a selection of Sweet servings. The talented pâtissier pays homage to classic American staples and adds a twist to Sticky Buns ($12) – cinnamon, pecans and vanilla ice cream; an adult version of Toaster Strudel ($12) – puff pastry, Honeycrisp apples and ice cream; and Sourdough French Toast ($13) – bacon maple, leche condensada and puffed rice.

Brunch-goers can bypass the mimosas and delight in Owner/Bar Manager Ben Potts’ weekend creations including Beets By Gray ($10) – cava, Mandarine, Giffard Pamplemousse and beet sorbet; My Tie Fighter ($12) – Miami Club rum, Smith & Cross rum, chai, acid-adjusted pineapple; and Teenage Mutant Ginger Turtle ($12) – Reyka vodka, tomatillo, ginger and house pepper blend.

Once again, Nasajon takes diners on a trip around the world with a revamped dinner menu. New must-try Bites include savory Mochi ($8) – bacalao, dill and scotch bonnet; and Papas Bravas ($10) – a spudtacular dish featuring rocoto, pesto and pearl onions. Colds include Black Kale ($13) – almonds, Rainier cherries and black radish; and Asian Pear ($13) – jamon Serrano, Cabrales and sherry. Last but not least, new Smalls and Not So Smalls include duck Pad Thai ($15) – peach and tamarind; Wellington ($28) – Wagyu brisket, puff pastry and Maitake mushrooms; and Chupe ($23) – sautéed shrimp with sushi rice and cilantro.

In addition to the new dinner menu items, Nasajon has introduced 4-course and 6-course prix fixe tasting menus, available nightly and priced at $40 and $60, respectively (excluding tax and gratuity). Happy Hour patrons can also experience new creations such as Grilled Cheese ($6) with chorizo and Swiss cheese; Cheesy Fries ($6) with aji amarillo and queso fresco; and Croquettes ($7) with Wagyu, Manchego cheese and jerk-aioli.
