Bianca at Delano , the iconic hotel’s chic Italian eatery, has rolled out savory new menu items in the spirit of the changing season. Carefully crafted by Chef de Cuisine Luciano Sautto, these new dishes feature seasonal ingredients and satisfying fall flavors. Guests of the indoor/outdoor restaurant can now nosh on appetizers such as White Asparagus a la Plancia with poached pullet egg, pecorino and tartufato ($26) or Slow Braised Veal Cheeks with parsnip purée ($22). Light eaters and poolside loungers can enjoy a refreshing salad of Roasted Baby Beets with citrus segments, pistachios and goat cheese ($22). The newest pasta dish is a rich Cavatelli with roasted squash, shrimp and arugula pesto ($32), and for an entreé patrons can select from Chilean Seabass with roasted tomatoes ($47), or Colorado Lamb with black garlic purée and charred sweet peppers ($49). New side dish offerings include Braised Kale with guanciale and onions for $12.
