I have a lot to say about Chimichurri because my mother makes the best chimichurri in the world. It is hard to top off my mom’s master secret recipe, and I almost never try chimichurri at restaurants in Miami because it usually comes from a bottle and I imagine they have a lot of preservatives.
About 5 months ago I went to see my accountant on Brickell and a Graziano’s restaurant was right at the lobby of her building and because I had enough time to spare I decided to have a glass of wine with something light to wat at Graziano’s – which by the way I heard is the best Argentine restaurant in Miami.
I sat down at a little table on the corner, it was lunch time so you were able to see a lot of locals from offices around having lunch. I ordered something (I do not remember what exactly), but they brought their home made chimichurri.
This chimichurri was garlicky but in a good way. It was made with very good quality olive oil which adds smoothness to the mixture. It had the perfect amount of vinegar and was stationed enough to have all of the flavors at the exact amount. Notes of oregano and parsley were there but in the background. I could eat this chimichurri all day long with everything; bread, crackers, soups, saladas, etc. Now, keep in mind that the main ingredient of a good chimichurri is garlic so if you have some you will probably have to spend the rest of the day without talking to anyone.
