Plantain Tostones

In Cuba, a group of vegetables including cassava, taro root, sweet potato, yam, potatoes, squash, and plantains are known as “viandas.” There vegetables, cooked in various ways are served daily as an accompaniment to protein dishes and are also used as a basis for desserts. It is a rare Cuban home that does no have a well-stocked viandero, from which the person in charge of the cooking selects the viandas to be prepared. Some of these vianderos are exquisite objects made of wood or ornate wrought iron while the modern of them are plastic.

Tostones are one of the many ways of cooking plantain and are very commonly eaten in Cuban homes.

Tostones recipe for 6 people

Ingredients

  • 3 green plantatins
  • olive oil for deep frying

Method

Peel the plantains by making longitudinal incisions along the skin with a sharp knife and removing the strips. Cut the plantains into slices 1 1/2 inches thick. Arrange the slices in a skillet and cover with oil. Cook them on a gentle heat until tender but not golden.

Remove the slices of plantain from the oil, drain, and flatten then with the palm of the hand or the bottom of a glass until the are about 1/2 inch thick.

Put 1/2 cup of water and a tablespoon of salt into a bowl. Wet the slices of plantain in the water then deep fry them in very hot oil until golden. Drain on paper towel. The tostones should be crisp on the outside and tender on the inside. Serve immediately.

I used to go to P.F. Chang’s in Aventura almost every week when I moved to Florida 6 years ago. I couldn’t stop eating their Kung Pao Shrimp (a quick-fried traditional dish with peanuts, chili peppers and scallions), and now after all this time, once in a while I visit for a quick bite at the bar.
I was there about a month ago and they now have a pre fixe menu for $3 – $6 items which I thought it was a pretty good option so I choose some of their classics with a nice glass of Chardonnay.

When food is not good I get aggressive (no worries, I don’t lash out to people), I keep it like Barack Obama; cool, calm and collected – but I had all of my hopes with this little tapa dish at the Tapas & Tintos Restaurant in Española way, Miami-Beach -  and it was certainly a disappointment.
First it says “fried chick peas” so I would have imagined those “fried” type of garganzos, but no, I got these mushy garbanzos that tasted as if they were boiled for hours. Hated them! plus no favor whatsoever.
Now let’s talk Spanish ham, well these bits and bites of Spanish ham were what saved the dish from disaster and a total waist of my money.

Why Did I Even Bother? The Cheesecake Factory in Fort Lauderdale

So I get into my car and drive to the Cheesecake Factory in Fort Lauderdale where I am suppoed to meet someone for a lunch-business meeting – well I met no one really as I sat there for 45 minutes and this person never showed up (nice).  In his defense, he mentioned he confused the date on his schedule. I did not intend to eat at the cheescake Factory (I am usually not a fan of such commercial, chain restaurants), but it was an easy spot to meet -  the wait was long and could not help myself so I started the food ordering frenzy.

First misted Avocado roll and because I was not getting my usual rush of “mmhh this is good, interesting, exciting, favorful, creative, talent is on the house” – I kept ordering appetizer after appetizer and frankly the food was so… I guess that if you are a turist from Germany (I had a table right next to me with happy faces while they ingested all sorts of gigantic fried dishes). For a second I thought, maybe this is what they think about the States, we eat everything fried and over-sized that’s why we are all so “fat” (I hear that a lot among people here, remember, I live in Miami and feels like 90% of of the people are from somewhere else and are so opinionated about why the rest of the country is “oh so large”). Add to that the obsession most Latin woman have with being fat and comments start to get nasty -  I am Latin and I do not like oversize fat people but I do not judge with nastiness as I used to when I was younger. Well, maybe because I have gained 10 pounds in the last 6 months – I know, it’s sad but oh so worth it.

Create Your Own Thai Lettuce Rolls – Satay Chicken Strips, Carrots, Bean Sprouts, Coconut Curry Noodles and Lettuce Leaves with three delicious Spicy Thai Sauces – Peanut, Sweet Red Chili and Tamarind-Cashew.
Now here with this dish things are getting nasty, this was absolutely horrifying – period. No accent flavors, all a big blah, maybe I don’t know how to pick the ingredients, but the noodles were tasteless, like plastic strips. The lettuce? they were the soft kind! – please if you want me to make a wrap with lettuce at least deliver something with a little bit more sturdiness to it.

A Sugar Rush at Buena Vista Deli (Little Haiti) Worth the Extra Calories

I don’t recall exactly how I found Buena Vista Deli in Little Haiti, probably on my way back from Fratelli Lyon. I love this part of town, those two-three blocks where you find Mandolin, Buena Vista Bistro and recently another little place just opened up (which I have to yet experience), but I stopped at Buena Vista Deli and could not believe my eyes.

I love the whole feeling at this deli, it reminds me of places where I grew up where you have a friendly smile and a caring owner always on site. As soon as I walked in, the owner, a young French guy, said hello with a big smile and I asked if I could take some pictures for Miami Culinary Tours blog. He took me to the kitchen and showed me how they make all of the pastries and introduced me to their pastry chef. He so proudly said they make all of it there (besides the bread).

Our first foodie stop was on Key Biscayne, then we visited various restaurants to grab the most delicious bites in Little Havana and ended the tour having an amazing Mojito at one of the most beautiful properties in Coral Gables. Included on our Miami food tasting tour was a short visit to one of the oldest bakeries in town where we savored some of the most exquisite desserts prepared by the same people who have been making cakes and amazing desserts with the highest quality ingredients for the last 25 years. Everyone was so happy (who wouldn’t when you get to try quick bites from the best secret restaurants on town!) all while learning the history of the area.
